Welcome to another episode of Single Mom Musings, because when you don’t have much of a social life, it gives you plenty of time to think – about EVERYthing.
As I struggled to throw a hodgepodge meal together one day, I realized that THINKING about cooking is the worst part of cooking.
There’s the thinking about ingredients. What ingredients do we have on hand? What ingredients do I need to buy from the store? What’s easy and quick to cook? What has some semblance of nutrition for me and my children versus something that would feed us in the short term but ultimately hurt our bodies in the long term?
This is why girl dinner is popular. My kids were gone for two years and during that time, I did not cook because I just had to feed myself. And if it comes to feeding myself, I’m going to the quickest, lowest common denominator, whether that’s buying food, whether that’s getting a pre-made salad from the grocery store, or eating cereal. I really think that says why charcuterie is so popular with women as well, because we all know it’s nothing more than fancy Lunchables And what are Lunchables? EASY – it’s low hanging fruit.
Anyway, here’s the end result of what I made – it didn’t look like much but tasted good.
